Today, I have some big news. I'm going to pastry school! 

I know, it's a big change from university, but it's what I want to do. I was studying ancient Greece and Rome at university and, after 2 and a half years, I decided that it was about time to stop doing something that I found pointless and start doing something worthwhile.



When I entered university, I didn't know what I wanted to do, but I thought I would figure it out after my first year. I didn't find it in first year or second year and I thought this was normal. I took Classics because it was interesting to me but, ultimately, I didn't see myself being able to get a job relevant to my degree after university, nor did I even want to. 

In the summer after second year, I started looking into pastry school. Baking was a hobby of mine, but I was starting to get more and more into it. I would daydream about what I could bake on the weekend or what new baking supplies I might get for my birthday. 

I toured one pastry school and the idea really hit home. I could do this. It seemed right and I was excited about my future for the first time in a long time.

Vanilla Bean Ice Cream

I'll be the first to admit that I have been a bad blogger. I expected to be posting at least once a week while on my Christmas break, yet I only posted once. I did bake, but I just didn't take photos and make posts about them. I take my photos with natural light and, since it's winter, the light goes at about 3pm. I tended to do a lot of baking in the afternoon or evening, meaning no light for photos. I also baked many of my favorite things which have already been posted on this blog, so it's not like I could put repeats up! I know those are poor excuses...

Cranberry and White Chocolate Scones

My go-to scone is normally lemon poppy seed, but, seeing as we are in my favorite month/season, I decided to change things up a bit. I’m not sure if cranberry and white chocolate is a classic holiday flavour combo because of the sweet-tart thing going on, or because it’s got Christmas colours… I’m thinking a little bit of both.


Scones and I have a nice relationship going. We’re not best friends, but we’re comfortable friends. We always go well together and have never had any upsets. Scones may not be my absolute favorite baked good, but they’re certainly a delight whenever they’re around.

Sweet & Salty Brownies

Papers are done, only one week of school left, and exams are far away enough that I can ignore them for now. Since I've finished my papers, I've kind of gone into vacation mode... My birthday, which was wonderful, didn't help matters, either, because I spent half a week eating at nice restaurants and getting gifts, one of which was an ice cream maker. Just so everyone knows, ice cream is going to start appearing on this blog soon. 


But, before I bust out the frozen treats, we've got these brownies. These brownies are the definition of decadence. Dark chocolate and salted caramel all wrapped up in one delicious, rich, amazing square. I've made these brownies about ten times now and I almost don't need to look at the recipe book any more.

Apple Cinnamon Buns with Maple Glaze

I often find myself thinking about all the things I would do if I didn't have to sleep.


Is that weird? Am I the only one who does that? I can't be, I bet everyone thinks about it but no one says anything. And if you honestly don't, now you will. 


As much as I love sleep, I'd really like to not have to sleep. So much more time to do things! I would definitely bake more. But I'd probably do things that I don't normally have lots of time for, like practicing guitar. My boyfriend gave me a super nice guitar for Christmas last year and I've learned a total of one song... I know bits of other songs, like the cute song from the Fellowship of the Ring and a basic version of the beginning of Stay or Leave by Dave Matthews. I've tried to learn a lot of songs, but it takes lots of time to completely get a song down. With school, work, and baking taking up most of my time, I don't always want to play guitar on my down-time. Sometimes I just want to sit on my couch and cuddle with my cat.
