Chocolate and hazelnut might be the best flavour combination in the whole wide world. I mean, Nutella. I don't even need to say anything more. But I will. Ferrero Rocher. The Ferrero company actually created Nutella. I go nuts for anything with chocolate and hazelnuts. Purdy's, a chocolate company, makes these things called 'Hedgehogs'. They're little milk chocolate hedgehogs but inside they have a delicious chocolate hazelnut interior, but it's incredibly smooth and a bit lighter than Nutella. They are to die for. You know what else is to die for? Nutella and banana on toast. And this banana bread is just like that. 



But, to the real point of this post, which is not for me to explain my undying love for all things chocolate and hazelnut. No, the point of this post is actually to ask for a bit of help. I'm off to New York City in late February with my Mama for week. I can't wait to visit all the best bakeries, boutiques, restaurants, cafes, and tea houses! But, the internet has so much information that it's almost... too much. That's where the lovely readers of this blog come in. Double Chocolate Loaf

This loaf shouldn't really be called a loaf. It should be 'Double Chocolate Cake in a Loaf Pan' because, to be honest, it's basically cake. A delicious, moist, delicious cake. I'm not normally a fan of cakes because I find them dry and boring. This, on the other hand, is not that kind of cake. This is the best cake-loaf you've ever had. And if you've never had a cake-loaf, then you're setting the bar pretty high with this one.

I used to not care whatsoever where my eggs came from, which is strange because I absolutely love animals. But I bought the cheapest eggs at the supermarket always because, hey, I was a cheap shopper and organic things always cost more. I knew about factory farms and the general conditions of hens in those places as I had watched a documentary in foods class back in high school. When I watched the documentary, I was horrified and angry, but after a day or two, the feeling faded and I pushed it to the back of my mind.

Whiskey Butterscotch Tartlets

Today, I have some big news. I'm going to pastry school! 

I know, it's a big change from university, but it's what I want to do. I was studying ancient Greece and Rome at university and, after 2 and a half years, I decided that it was about time to stop doing something that I found pointless and start doing something worthwhile.



When I entered university, I didn't know what I wanted to do, but I thought I would figure it out after my first year. I didn't find it in first year or second year and I thought this was normal. I took Classics because it was interesting to me but, ultimately, I didn't see myself being able to get a job relevant to my degree after university, nor did I even want to. 

In the summer after second year, I started looking into pastry school. Baking was a hobby of mine, but I was starting to get more and more into it. I would daydream about what I could bake on the weekend or what new baking supplies I might get for my birthday. 

I toured one pastry school and the idea really hit home. I could do this. It seemed right and I was excited about my future for the first time in a long time.

I'll be the first to admit that I have been a bad blogger. I expected to be posting at least once a week while on my Christmas break, yet I only posted once. I did bake, but I just didn't take photos and make posts about them. I take my photos with natural light and, since it's winter, the light goes at about 3pm. I tended to do a lot of baking in the afternoon or evening, meaning no light for photos. I also baked many of my favorite things which have already been posted on this blog, so it's not like I could put repeats up! I know those are poor excuses...
